About De Moor Chablis 1er Cru Mont de Milieu

De Moor Chablis 1er Cru Mont de Milieu is a natural white wine made by Alice et Olivier De Moor with the Chardonnay variety in the AOC Chablis Premier Cru, in Burgundy (France).

Domaine Alice et Olivier De Moor was set up by a young winemaking couple who decided to start their own project with 4 hectares of vineyards in Courgis, Burgundy. Alice and Olivier cultivate their vines using organic agriculture and make their wines with minimal intervention. This work results in natural wines that are energetic and full of life.

De Moor Chablis 1er Cru Mont de Milieu comes from vines planted on red clay soils, east of Chablis. This is an organic and biodynamic estate where no chemicals are used. Harvesting is carried out late and manually using small boxes to protect the grapes as much as possible.

In the winery, the De Moor Chablis 1er Cru Mont de Milieu grapes undergo a long spontaneous fermentation with native yeasts. The wine then ages on lees for 18 months in old, 225-litre barrels. Finally it is bottled with a tiny amount of sulphur.

With a focus on not using any technology that could affect the results, De Moor Chablis 1er Cru Mont de Milieu is a wine made with great intentions that bring about extraordinary results. A juicy and vibrant Chablis 1er Cru.

De Moor Chablis 1er Cru Mont de Milieu 2018 is a white wine with aromas of ripe fruit, herbal notes and mineral hints. On the palate it is juicy, rich and energetic. A wine with crisp acidity, well-integrated aging and a very seductive saline finish.
