About Viña Pomal Blanco Reserva

Bodegas Bilbaínas are not merely wine producers. This company, established over a century ago, is more than a winery: it is a source and custodian of the finest tradition and heritage of the DOCa. Rioja. Therefore, true to this spirit, they craft Viña Pomal Blanco Reserva, a wine with which they revive "the finest tradition in the crafting of great aged white wines." 
 
As this definition suggests, Viña Pomal Blanco Reserva is a long-aged white wine created from a blend of viura, garnacha blanca, and tempranillo blanco. All these varieties come from the winery's own vineyards located in different areas of La Rioja, such as Rioja Alta and Rioja Alavesa. These regions are renowned for their diverse soils, featuring a mix of calcareous clays over an alluvial subsoil, abundant with pebbles that facilitate drainage of moderate rainfall. In this instance, the old vines, over 40 years of age, are strategically positioned at the confluence of the Atlantic and Mediterranean climates, achieving the finesse so characteristic and essential for crafting Viña Pomal Blanco Reserva. 
 
All these varieties, which are the most typical of the region, are harvested and processed separately, although the procedures are the same for each: destemming, crushing, prefermentative maceration (also known as skin contact) for about 3 hours, and pressing. Once the must for Viña Pomal Blanco Reserva is obtained, it is left to settle. This process, known as static settling, is conducted in the cold to clarify the must. Thanks to these low temperatures, the suspended particles will precipitate to the bottom, resulting in a higher quality must that will yield much better results once fermentation occurs. Indeed, this will be the next step for Viña Pomal Blanco Reserva, which is transferred to stainless steel tanks (where fermentation will begin) and oak barrels (where the yeasts will complete their task). Here, in this wood, the three batches of Viña Pomal Blanco Reserva will rest in contact with their lees for at least six months, undergoing periodic bâtonnage to enhance its mouthfeel. After this period, it is time to blend the three varieties, with Viña Pomal Blanco Reserva spending another 36 months in these same barrels and an additional 12 months in the bottle.
